
Salt and Pepper Chicken Wings
Starch-coated chicken mid-wings pan-fry to a delicate golden crust, then get tossed with fragrant salt-and-pepper seasoning flecked with chili. Crisp outside, juicy within, these wings vanish from the plate remarkably quickly.

Clean the chicken mid-wings thoroughly, wipe off the surface moisture, and make two cuts on both the inside and outside.

Place in a bowl, add a small amount of salt, MSG, and light soy sauce, and marinate for 15 minutes.

Sprinkle a layer of cornstarch on the marinated chicken wings, both inside and out.

Put the chicken mid-wings into the oil pan and fry both sides over low heat.
