Braised Pork Ribs with Shiitake Mushrooms

Meaty pork ribs braise for half an hour with earthy shiitake mushrooms and dried scallops, letting dark soy sauce and rock sugar build a glossy, umami-rich glaze that clings to every tender bite.

    Wash the pork ribs (no need to blanch the ribs), soak the shiitake mushrooms and dried scallops, and chop the ginger and garlic into small pieces for later use.

    Add salt, cornstarch, and oil to the ribs.

    Mix well and marinate for a while to let the flavor in.

    Heat the pan, no need to add oil, sear both sides of the ribs to lock in the moisture.

    Add the chopped ginger and garlic and stir-fry.

    Pour in enough boiling water so that the water level just covers the ribs.
