
Honglai Chicken Feet
Chicken feet from Honglai are braised in a spiced soy broth until gelatinously tender and deeply flavored. Served chilled or warm, they are a beloved Fujian snack with rich collagen.
Instructions

Buy chicken feet, wash them clean, trim off the claws, pour boiling water over them, and let them cool.

Add oil to the pot, put in rock sugar, and heat until it foams.

Add the chicken feet and stir-fry evenly until colored, then add: star anise, cinnamon, bay leaves, and dried chili peppers, and continue stir-frying.

Then add these ingredients and a little MSG, only a little dark soy sauce.

Add boiling water and chicken feet about the same, add a piece of ginger, some garlic, and a little five-spice powder.

Cover the pot with a lid and cook on medium-high heat for 8 minutes.

Open the lid and reduce over high heat until dry.

Take it out, and if you're worried about it sticking, you can add a little oil and stir it.
