
Stir-fried Pork with Bamboo Shoots
Spring's first bamboo shoots bring a crisp bite to this quick stir-fry with shredded pork. A splash of soy sauce and a pinch of sugar let the fresh, grassy flavor shine.

Fresh early bamboo shoots.

Remove the shell.

Wash clean and cut in half.

Slice.

Place the pot on the stove, add water and bring it to a boil, then blanch the bamboo shoots briefly.

Scoop it up, put it into a bowl, and set aside.

Set the shredded meat aside.

Marinate the shredded meat with a little light soy sauce and cooking wine for 10 minutes.

Heat the wok, add an appropriate amount of oil, pour in the shredded meat and stir-fry, then add the early bamboo shoots and season with an appropriate amount of salt, stir-fry a few times and it’s ready.
