
Braised Eel Sections
Eel segments are braised in a glossy soy sauce with garlic, ginger and a touch of sugar. The rich glaze coats each piece, yielding tender meat with a deep, savory sweetness.

Clean the eel segments, make a cut horizontally on the back to allow the flavor to penetrate. Rinse with hot water to remove mucus and reduce the fishy smell.

Cut the cucumber into sections and slice it open. Prepare some small yellow ginger and sections of green onion.

Heat the wok before adding cold oil, then add sliced ginger when the meat is 60% cooked.

When the oil is at 80% heat, add the eel sections and change to medium heat to pan-fry slowly. After frying until the surface is golden yellow, add salt, cooking wine, and hot water to braise.

Add cucumber and garlic cloves when almost cooked.

Add soy sauce and star anise powder, then remove from heat.
