Amaranth in Superior Soup
Tender amaranth leaves are poached in a savory superior broth with garlic and a touch of preserved egg. The simple preparation lets the vegetable's earthy sweetness take center stage.

Remove the old stalks of the amaranth and rinse it clean.

Preserved egg and ham diced, ginger sliced, garlic cut into large pieces and set aside.

Boil water, then add the amaranth and blanch until cooked.

Take it out and drain it dry.

Pour oil into the pot and heat until it is 60% hot, then add ginger and garlic to sauté until fragrant.

Add century eggs, and stir-fry the ham for a while.

Add water or broth and bring to a boil.

Add an appropriate amount of salt to enhance the flavor of the matsutake mushrooms.
