Stir-fried Dried Lettuce Stems with Chinese Sausage
Dried celtuce strips add an appealing chewiness to this stir-fry with sliced cured sausage. The smoky, savory sausage oils coat the vegetables, making a richly flavored dish with minimal seasoning.
Instructions

Soak the dried lettuce stems in water until they soften.

Clean thoroughly and squeeze out the water, set aside.

Chop the green onions and ginger into small pieces, slice the Chinese sausage, and cut the green and red peppers into sections (I used frozen ones from my stock).

Pour oil into the pan and heat it, then add the chili, ginger, and garlic and stir-fry until fragrant.

Add the dried lettuce stems and stir-fry.

Add light soy sauce, oyster sauce, and salt, and stir-fry evenly.

The Chinese sausage is cooked, and should be added at the end to stir-fry until soft.

Add a little fresh matsutake before taking it off the heat.
