
Wuwei Zhai Stir-Fried Cold Jelly Noodles
Cubes of cool mung bean jelly are pan-fried until lightly charred, then dressed with soy, vinegar, chili oil and garlic for a five-flavor vegetarian treat. The contrast of crisp outside and silky inside is irresistible.

Make cold noodles with sweet potato starch and water at a ratio of 1:6 and set aside.

Cut the sweet potato jelly into pieces and add various seasonings.

Mix the main ingredients and seasonings evenly.

Turn on low heat, pour in cooking oil, then add the liangfen and spread it evenly.

Put the lid on and cook on high heat for 3-5 minutes.
