Minced meat with vermicelli
Softened glass noodles are stir-fried with browned minced pork, chili bean paste, garlic, and green pepper, glossed with layered soy sauces until every strand turns savory and slippery, a fiery, moreish dish that clings to chopsticks and rice alike.

Soak the vermicelli in cold water until it softens. After the water in the pot boils, put in the vermicelli and cook until soft. When the vermicelli turns white in color, take it out, rinse it with cold water, then drain it again and put it in a bowl for later use.
