
Beef Stir-Fried with Bean Sprouts
Thin slices of yellow beef, velveted with starch and white pepper, are seared then rejoined with wok-tossed soybean sprouts, simmered briefly and finished with chili powder, a hearty, savory stir-fry where tender meat meets crunchy, juice-laden sprouts.

Cut the beef into thin slices and marinate with cornstarch, light soy sauce, and pepper for 20 minutes.
