Shredded Dried Tofu

A classic Jiangnan comfort dish in which blanched shredded dried tofu simmers gently with shrimp, edamame, and ginger until the broth turns milky, then is finished with white pepper and sesame oil for a light, silky bowl full of quiet elegance.

    Clean the ingredients and set them aside.

    The dried tofu strips should be blanched first to remove the beany smell.

    Heat the pan and pour in oil, stir-fry edamame and dried shrimp, and add a bit of salt to create a base flavor.

    Add boiling water and cook briefly until the soup turns white.

    Add the blanched dried tofu strips, add shredded ginger, add salt, cover and cook until soft and tender.
