Clean the ingredients and set them aside.

The dried tofu strips should be blanched first to remove the beany smell.

Heat the pan and pour in oil, stir-fry edamame and dried shrimp, and add a bit of salt to create a base flavor.

Add boiling water and cook briefly until the soup turns white.

Add the blanched dried tofu strips, add shredded ginger, add salt, cover and cook until soft and tender.

Add scallions, salt, and pepper to season, drizzle with sesame oil, and plate.
