Stir-Fried Lotus Root Slices
Lotus root is peeled, sliced and soaked with a little vinegar to keep it white, parboiled, then stir-fried in lard with garlic and scallion until just tender, a light, crisp dish celebrating the root's clean, faintly sweet flavor.

Prepare two lotus roots. You can keep the ones prepared here for next time when stir-frying.

Peel the lotus root.

Slice it into pieces like this, add a little vinegar to prevent it from turning black.

Bring a pot of water to a boil and add lotus root slices, cooking until half-cooked.

Add a little lard.

Add the garlic slices when the oil is hot.

Add the lotus root slices.

Stir-fry the chopped scallions evenly, add salt, and transfer to a plate.
