
Stir-fried Eggs with Cowpeas
Tender long beans are wok-fragranced first, then folded into seasoned egg and pan-fried into a golden omelette with crisp-tender edges, a simple farmhouse dish full of flavor.

Wash the cowpeas and dry them, then cut into small pieces. Beat the eggs and add 2/3 teaspoon of salt, 1/3 teaspoon of pepper, and 1/2 tablespoon of peanut oil, then whisk evenly and set aside.

Clean the pan and dry it, turn to medium-low heat, and slowly stir-fry the cowpeas until fragrant and just tender;

Pour the cowpeas into the beaten eggs and stir evenly.

Heat the pan, add about 1 tablespoon of oil, and evenly pour the egg mixture and cowpeas into the pan;

Then immediately turn to low heat, and use a spatula to spread uneven areas evenly;

Wait until the egg mixture solidifies into a pancake shape and the bottom is fried to a golden color, then flip the omelet and fry until golden, then it can be served. If you are not plating it for photos, you can use a spatula to break it into pieces, it will smell delicious.
