This bitter melon was bought really well, it's big, green, and fresh. Wash it, remove the seeds, and cut it into slices.

Bring water to a boil in a pot, then add a little salt and blanch the bitter shoots briefly.

Rinse several times with cold water, bright green and crisp.

Pour in the seasoning sauce and mix well, then add minced garlic and toasted sesame seeds and mix well.
