
Sweet and sour pork tenderloin
Pork tenderloin strips are coated in batter, fried until crisp, then tossed in a glossy sweet-and-sour sauce that clings to every piece, a beloved classic with irresistible crunch.

Two pork tenderloins, cleaned and then cut along the grain into small strips like this.

Marinate with salt, white pepper, and yellow wine for ten minutes.

Mix two egg whites with a spoonful of starch until well combined. I didn't separate my egg whites properly, so you'll have to imagine it.

Pour into the shredded meat.

Make a batter with one egg and flour mixed with starch at a 1:1 ratio.

Add water and stir into a thick paste.

Stir evenly.

Pour it into the marinated meat and mix well.

Heat the oil until it is about 80% hot and smoking.
