Plump black fungus is braised with generous lengths of scallion until the sauce turns glossy and savory, a classic preparation where simple ingredients develop remarkable depth.

    Soak the wood ear mushrooms in water and set aside.

    Soaked wood ear mushrooms are cleaned and torn into small pieces.

    Place the pot on the stove, blanch the soaked wood ear mushrooms in boiling water until cooked, take them out, drain, and place them on a plate.
