Garlic Mashed White-Skinned Pumpkin
Pale-fleshed pumpkin is sliced and stir-fried with plenty of garlic until tender but intact, yielding a gently sweet, comforting side that pairs well with nearly any home-cooked meal.

Set the white-fleshed pumpkin aside.

Wash, peel, and cut into thin slices.

Chop the garlic and set it aside.

Heat oil in a pan, add sliced garlic and stir-fry until fragrant, then pour in pumpkin slices, add a little water, stir-fry quickly, and when the pumpkin slices become slightly translucent, reduce the liquid, season with a little salt and soy sauce, and stir evenly before serving.

Take it out of the pot and serve it on a plate.
