
Dry-Fried Green Beans
Long green beans are dry-fried until blistered and wrinkled, then tossed with garlic, chilies and a touch of Sichuan pepper for a smoky, savory dish with irresistible texture.

First, cut the long beans into slightly longer segments, as shown in the picture.

Add an appropriate amount of oil to the pan, and when the oil reaches 60% heat, add the green beans and fry until they have a tiger-skin texture.

Scoop it out and place it in a bowl for later use.

Prepare the ingredients.

Leave some oil in the pan and add ginger, garlic, Sichuan peppercorns, and dried chili peppers.

After stir-frying until fragrant, add the fried long green beans, season with a little salt, sugar, MSG, light soy sauce, and vinegar, then stir-fry evenly. Sprinkle with white sesame seeds before serving.
