Stir-Fried Small River Shrimps
Freshwater shrimps are flash-fried with ginger slivers and scallion sections, a minimalist approach that lets their natural sweetness and delicate texture speak for themselves, best enjoyed hot with steamed rice.

Wash the small river shrimp several times, drain the water, and just prepare some green onions and ginger.

Stir-fry with scallions and ginger in the pan.

Pour in the drained shrimp.

Stir-fry for two to three minutes, evaporating the moisture.

Add salt, and a bit of yellow wine to remove the fishy smell.
