
Spicy Pork Trotter Hotpot
Pig trotters are pressure-cooked with a fragrant spice bundle and a punchy sauce of soy, oyster sauce, and fermented bean curd until meltingly tender, then served as a spicy, numbing hot pot base for dipping vegetables and soybeans.

Half a kilogram of pig's trotters, cut into four pieces, soaked in water for two hours, you can add some white vinegar.

After stewing the pig's trotters, cook some soybeans. Soak them in advance; after about three to five hours, they will be well soaked. In hot weather, soak them in the refrigerator.

Prepare some spices, this is casual, having fewer varieties doesn't make much difference: Sichuan pepper, star anise, cinnamon, bay leaves, and chili are enough. Also, prepare some green onions and ginger.

Stir-fry the dry ingredients over low heat, then put them in a cheesecloth to make a spice bag.

Blanch the pig trotters, drain them after blanching, and place them in a pressure cooker.

Sauce: soy sauce, dark soy sauce, oyster sauce, Chu Hou sauce, fermented bean curd, salt, mixed evenly.

Reheat the oil left from frying the dry ingredients, and fry the prepared sauce briefly to make it more fragrant.

Pour the fried sauce into the pork trotters in the pressure cooker, add the seasoning packet and rock sugar.

Add boiling water until it covers the pig's trotters, add a bit more soup, which can be used for blanching vegetables and cooking some soybeans as a cold dish.

Press at 90 Pa for 20 minutes, take out the material pack, and soaking it for two to three hours will make it very flavorful.
