Homestyle Stir-Fried Chicken

Bone-in chicken pieces are wok-braised with ginger, garlic, star anise and dried chilies until tender, then finished with fresh green peppers and a drizzle of Sichuan pepper oil.

    The little rooster is cleaned up.

    Cut into pieces, add flour and water and knead a bit, then rinse clean and drain the water.

    Add an appropriate amount of base oil to the pot, then in order add star anise, sections of green onion, slices of ginger, garlic cloves, dried chili peppers, and Sichuan peppercorns and stir-fry until fragrant.

    Add the chicken pieces and stir-fry until the moisture evaporates.

    Add dark soy sauce while cooking, and after stir-frying to release the sauce aroma, add boiling water.

    After the pot boils, add salt and simmer on low heat.

    When the chicken is cooked, add string peppers or screw peppers, then add MSG, black pepper, and sugar to taste, and cook on high heat until the sauce thickens.

    Drizzle some Sichuan pepper oil before taking it off the heat to enhance the flavor.
