
Dry Pot Three Mushrooms
King oyster, shiitake, and fawn mushrooms are dry-fried until chewy and fragrant, then tossed with seared pork belly, chilies, and steamed-fish soy sauce over a bed of sweet onions in a sizzling dry pot.
Instructions

Shred the onions and stir-fry until just cooked, then place them at the bottom of a dry pot and set aside.

Cut the three types of mushrooms separately.

Add a bit more base oil to the pot, then add the mushrooms and stir-fry repeatedly until all the moisture is gone, and they are oily, dry, fragrant, and golden brown. (This step can also be deep-fried)

Serve and set aside.

In another pan, add a little base oil, then add the pork belly slices and stir-fry to release the fat. Next, add ginger, garlic, and small chili peppers and stir-fry until fragrant.

Add the three types of mushrooms, then add steamed fish soy sauce, MSG, and dark soy sauce to season, and stir-fry until fragrant.

Add chopped scallions.

Pour into a dry pot with a base of sautéed onions, and serve directly on the table with an alcohol stove.
