Egg-battered hairtail segments are fried until golden, then gently braised with ginger, garlic, and scallions in a glossy sauce of soy, sugar, and a splash of vinegar, yielding rich, savory, flaky fish.

Clean the ribbonfish and marinate it with cooking wine and salt for 20 minutes.

Crack the eggs into the bowl.

Use your hands to evenly coat the marinated hairtail.

Place the pot on the stove, pour in the oil and heat it until it is about 60% hot, then put the hairtail pieces coated with egg mixture into the pot.

Pan-fry until both sides are golden brown.

Scoop it out and place it on a plate for later use.

Prepare slices of ginger and cloves of garlic.

Cut the green onions into sections and set aside.

Mix a little dark soy sauce, white sugar, cooking wine, salt, vinegar, and an appropriate amount of water to make a sauce.

Heat the remaining oil in the pot, add ginger slices and garlic cloves to stir-fry until fragrant, pour in the seasoning sauce, add the cut ribbonfish, bring to a boil, then reduce to low heat and simmer for about 10 minutes. When the sauce is thickened.
