Stir-fried Dried Lettuce Stem with Wood Ear Mushrooms

Rehydrated dried lettuce stems and blanched wood ears are stir-fried with garlic and chili until squeaky-crisp, seasoned simply with salt and thirteen-spice for a light, refreshing, wonderfully crunchy vegetarian side.

    Soak the dried asparagus lettuce in clean water overnight, wash it thoroughly, take it out, squeeze out the excess water, and place it in a plate.

    Soak the wood ear mushrooms until soft, clean them, tear into small pieces, blanch them, remove and rinse with cold water, drain the water, put them in a bowl, and set aside.

    Slice the chili peppers into rings and slice the garlic, set aside.

    Heat the pan and add an appropriate amount of oil, then add the chili and garlic to stir-fry until fragrant. Next, add the dried lettuce stems and wood ear mushrooms, season with a little salt and thirteen-spice powder, and stir-fry for a moment before serving.
