Chinese sausage with dried bamboo shoots

Steamed cured sausage, sweet and winey, is stir-fried with rehydrated bamboo shoots and green chilies, then simmered briefly so the shoots soak up the rendered sausage fat for a chewy, savory, gently spicy pairing.
