
Braised King Oyster Mushrooms with Wood Ear Fungus
King oyster mushrooms are dry-sauteed until golden and meaty, then wok-tossed with blanched wood ears, garlic, and ginger in a glossy soy-oyster sauce, creating a satisfyingly chewy dish packed with umami.

Put the pot on the stove with clean water and bring it to a boil. Add soaked wood ear mushrooms, 1/2 tablespoon of peanut oil, and 1 teaspoon of salt. Reduce to medium heat and cook for about 5 minutes until the wood ear mushrooms are softened, then remove the mushrooms and drain.

Cut the king oyster mushrooms into irregular chunks, clean the pan, add the king oyster mushrooms, turn the heat to medium, and slowly stir-fry the mushrooms until the moisture evaporates and they turn slightly yellow.

Place a bowl, add 1 small spoon of fresh matsutake, 1 tablespoon of soy sauce paste, 1/2 tablespoon of oyster sauce, 1/2 tablespoon of starch, 1/2 tablespoon of sesame oil, and 1/4 cup of water, and mix into a bowl sauce;

Heat the pan and add peanut oil. When the oil is hot, add minced garlic and sliced ginger, and stir-fry until fragrant.

Pour in the king oyster mushrooms and wood ear mushrooms, and stir-fry briefly;

Pour in the sauce, toss evenly, turn off the heat, and serve.
