Braised Pork with Taro and Preserved Vegetables

A festive classic: pork belly is boiled, deep-fried until blistered, then soaked and layered with creamy taro and salted preserved mustard greens, steamed until the rich, savory sauce soaks into every layer.

    Cut the purchased pork belly into sections and wash them clean.

    Add cooking wine and ginger slices to cold water in the pot. I forgot to buy green onions, so I didn't add them. If you have green onions, add them. Then put in the pork belly.

    Once it boils, skim off the foam, then simmer on medium heat for about twenty minutes. It’s done when chopsticks can easily pierce through.

    Take it out and rinse it in cold water, then poke it with a fork, making sure to poke every part.

    Rub the tied pork belly with salt.

    Then apply dark soy sauce and set it aside to cool for a bit.

    When the oil is medium hot, put in the pork belly to fry, fry both sides until it looks like this. Remember, during this process you must cover the pot, otherwise the oil will splash all over your face. Safety comes first.

    Soak the fried meat in water; soaking it for about an hour until it looks like this is fine.

    While soaking the pork, let's prepare the preserved mustard greens. Wash the preserved mustard greens clean, chop them, and soak them in water for at least an hour. During the soaking process, I changed the water twice.

    These taro are grown by our family, freshly harvested. Wash the taro and cut it into slices.

    Heat the oil that was just used to fry the pork belly, add the sliced taro and fry it until it floats and turns slightly golden.

    Slice the soaked pork belly, try to cut it as thin as possible. My knife skills are not very good, so mine are a bit thick 😂

    Add all the ingredients listed in the ingredients, and adjust the ingredients yourself to reduce the strength or increase the quantity.

    Mix evenly and set aside to marinate for half an hour.
