Five-Spice Sichuan Pepper Tofu

Chewy dried tofu cubes are flash-fried in fragrant rapeseed oil with whole Sichuan peppercorns and bird's eye chilies, then seasoned with five-spice powder and a splash of soy sauce for a boldly numbing, savory snack.

    Cut the dried tofu into small cubes (take a handful as a sample for photographing);

    Put a pot with 1 tablespoon of rapeseed oil and Sichuan peppercorns, add 3 small dried red chilies cut into sections, and simmer over medium-low heat until the oil is hot;

    Pour in the dried tofu and stir-fry quickly;

    Add 1/2 teaspoon of fine salt, mix evenly, then drip about 1 teaspoon of Wei Ji Xian (flavor-enhancing soy sauce) along the edge of the bowl; the heat of the pan can release the aroma of the soy sauce.
