
Braised Pork Ribs with Preserved Plums
Tender pork ribs are caramelized with yellow rock sugar, then slow-braised with plump preserved plums, ginger, and shallots until the sour-sweet fruit melts into a glossy, deeply savory glaze that coats every meaty piece.

Soak the preserved plums thoroughly in the evening.

Rinse the ribs with clean water to remove the blood, and pat dry.

Place the clay pot on the stove, turn to medium heat, and add 2 tablespoons of canola oil and 30–35 grams of yellow rock sugar.

Turn to low heat and stir constantly, cooking until the rock sugar melts and turns brown, but do not burn it;

Cut the shallots into quarters, add ginger slices and shallots into the pot, then stir and sauté until fragrant;

Pour in the ribs and stir-fry, allowing the ribs to be coated with caramelized sugar.

Pour the water that the preserved plums were soaked in into the pot. If there isn't enough water, add hot water until the water basically covers the ribs.

Turn to low heat, cover the pot, and simmer for about 20-30 minutes. After the time is up, check the tenderness of the ribs, and if you want them to be more tender, continue to cook for a little longer.

Taste it, cook on high heat until the sauce thickens, then it's ready to serve. Enjoy!
