Steamed Grouper

Grouper steams just until the flesh turns pearl-white and flaky, then gets refreshed with boiling cooking wine, blanching soy and a crown of hot oil for clean, ocean-sweet flavor.

    Clean 1 grouper, remove the gills, scales, and internal organs, then cut it diagonally. Add an appropriate amount of cooking wine, salt, and blanched ginger slices.

    Put it in the pot, cover with a lid, and steam for 13 to 15 minutes.

    Pour out the original broth from the pot, add an appropriate amount of cooking oil, cooking wine, and blanching sauce to the pot and bring to a boil, then pour it over the fish. Garnish with slices of red chili and celery leaves.
