
Braised Pork
Pork belly is caramelized in sugar, then braised with ginger powder, Sichuan pepper, star anise, black cardamom and other spices plus red fermented tofu juice, until the sauce thickens into a glossy, deep amber glaze over meltingly tender meat.
Instructions

Clean the pork thoroughly and cut it into pieces.

Add a base layer of oil to the pot, stir-fry sugar until caramelized, then add the pieces of pork belly.

Add hot water, then add ginger powder, Sichuan pepper powder, tsaoko, angelica root, star anise, and myrica fruit (for coloring).

Then add the chopped green onions, sliced ginger, and salt to stew.

Add red fermented bean curd sauce (for coloring effect).

Finally, add a small amount of salt according to taste, and reduce the sauce (the color is very attractive).

The dish has a bright red and attractive color, is plump but not greasy, melts in the mouth, and the rich meat aroma intertwined with the thick sauce leaves an endless aftertaste.
