
Salted Pork with Chili and Green Beans
Salted pork shreds fry until faintly crisp and deeply savory, lending their umami to green beans and mild peppers for a Cantonese-style stir-fry that is smoky, salty and quietly spicy.
Instructions

Cut the green beans and hot peppers into thin strips.

After washing the salted meat, pat it dry, do not remove the skin, and cut it into thin strips;

Cut the shallots into quarters, crush and chop the garlic, and mince the ginger.

Heat the wok over medium-high heat, add 2 tablespoons of canola oil when the wok is hot, and then add the green beans;

Sauté over medium heat until the water is released and the beans are half-cooked, push the bean shreds to one side, and lift the bean shreds while leaving the oil in the pan;

Add the shredded salted meat and stir-fry until slightly browned, then remove from the pan.

Turn to medium-high heat, add minced ginger, shallots, and garlic to the hot oil, and stir-fry until fragrant;

Add the bean threads, sliced peppers, and shredded meat, sprinkle in 2/3 teaspoon of fine salt and 1/4 teaspoon of pepper, toss a few times, then drizzle 1 teaspoon of Wei Ji Xian along the edge of the pan to gather the aroma at the side of the pan;

Stir quickly to mix evenly, then remove from the pan. Enjoy!
