
Garlic Shrimp Tails
Plump crayfish tails are seared, then simmered in beer with two waves of garlic — one fried golden, one added fresh — for a glossy, punchy sauce that begs for rice.
Instructions

Crush the garlic (a bit more) with a food processor and rinse it. Squeeze out the water and set aside.

Blanch the shrimp tails with ginger slices and cooking wine.

Rinse with cold water and drain off the excess moisture.

Add more oil to the pan and stir-fry the shrimp tails over high heat. If possible, it’s best to deep-fry them.

Add a little base oil to the pan, then add 2/3 of the minced garlic and stir-fry over low heat.

When it turns slightly golden, add oyster sauce and light soy sauce and stir-fry until fragrant.

Add the shrimp tails and stir-fry evenly, then add salt, MSG, an appropriate amount of beer and water, and turn to high heat to boil to release some of the beer aroma.

Then cover the pot, reduce to low heat, and simmer for 10 minutes. Finally, add the remaining 1/3 of the minced raw garlic and use high heat to thicken the sauce.

Once the sauce is thickened, sprinkle with chopped green onions and it's ready to serve.
