
Steamed tofu stuffed with meat
Golden tofu puffs are plumped with egg-flecked pork filling, then steamed over salted pork strips and broad beans so each juicy parcel soaks up the savory steam — a light, comforting Jiangnan dish.
Instructions

Prepare all the ingredients. Please ignore the tripe knots, they are useless.

Add eggs, minced ginger, white sugar, light soy sauce, and a little Sichuan pepper powder to the minced pork with a mix of fat and lean, and mix thoroughly until even.

Cut the salted meat into strips, slice the ginger into shreds, and cut the small chili peppers into short sections. Chop the remaining bit of green onion as well. Wash the broad beans and drain the water.

Stuff the prepared meat filling into the tofu puffs.

Prepare the steamer and arrange the plate.

Arrange all the ingredients in order.

Place in the steamer with cold water and steam for 25 minutes.
