
Shrimp with Crab Roe
Butter-seared shrimp are glazed in a rich, sandy sauce of mashed salted egg yolk, bubbling into a savory, slightly sweet coating that clings to every bite, finished with a scatter of scallions.

Peel the green shrimp or Palaemon shrimp and remove the veins, cut along the back, and use kitchen paper to absorb the moisture and set aside.

Put the shrimp into cooking wine, pepper, salt, and starch, and mix evenly, then marinate for 10 minutes.

Heat a cold pan with oil, quickly stir-fry the shrimp until it changes color, then remove and set aside.

Steam the salted egg yolk for 5 minutes, let it cool, and then mash it.

Put butter and salted egg yolk into a hot pan and stir-fry over low heat until fragrant, foamy, and sandy.

Pour in the shrimp, gently stir-fry, making sure the shrimp is evenly coated with crab roe sauce. Add a little sugar to enhance the flavor, and decide whether to add salt after tasting.
