
Dried Vegetable Duck Leg
Duck legs are chopped and stir-fried in oil until the fat renders, then braised with dried vegetables, star anise, Sichuan pepper, dark soy and sweet dates until the sauce reduces to a glaze, savory with a gentle sweetness.

Add about 5ml of vegetable oil to the pot, and once the oil is hot, add the duck leg meat chopped into pieces. Stir-fry to release the fat, then add cooking wine, star anise, and Sichuan peppercorns. Stir twice to mix evenly, then add dark soy sauce and an appropriate amount of water, enough to level with the duck leg meat. Cover and simmer for about 15 minutes, then add dried vegetables that have been soaked for about 1 hour. Add salt and continue to cover and simmer for 10 minutes.

Add the dates, cook for 2-3 minutes and reduce the sauce, done.
