
Stir-Fried Wild Rice Stem
Shredded wild rice stem, carrot and fresh pork are stir-fried with ginger, scallion and soy until tender, a home-style Jiangnan dish in which the water bamboo's juicy crunch pairs beautifully with the savory slivers of meat.

The main ingredients are easy to handle. If you are pairing it with rice, it is recommended to use fresh meat (just a small piece of meat).

Cut everything into shreds, with the carrot shreds slightly thicker and the water bamboo shreds slightly thinner.

Add a little oil, then ginger slivers, and shredded meat (fresh shredded meat should be marinated with soy sauce and starch for a while beforehand).

When the pork strips release oil and turn slightly yellow, add soy sauce and stir-fry briefly.

Add shredded green onions and briefly stir-fry the shredded carrots a little.

Add shredded water bamboo shoots and stir-fry.

Both shredded ingredients have become a bit soft. Finally, add some shredded green onions (you can add oyster sauce or MSG for extra flavor; if using fresh meat shreds, add salt at this step).
