Exclusive Poached Octopus
Whole octopus is cleaned and cut into segments, blanched for just thirty seconds in ginger and cooking-wine water, then plunged into ice for a springy bite, served with a punchy doubanjiang dip that lifts its clean, oceanic sweetness.
Instructions

The octopus removed the black inner lining.

Wash it clean.

Cut into small pieces.

Boil water in a pot, add ginger slices, and a little cooking wine.

After boiling again, add the octopus.

Boil for half a minute, take it out and drain the water, then put it in ice cubes or in the freezer.

Dipping it in bean paste tastes even better.
