Fried Shredded Radish Cake
Grated radish is salted and squeezed dry, mixed with cilantro, chili and Sichuan pepper powders, then pressed into hot oil-coated ladles, covered with a thin flour batter and deep-fried into crisp, golden fritters that stay tender inside.
Instructions
- 1

Wash the carrot and peel it.
- 2

Shred it into thin strips, add two tablespoons of salt and two tablespoons of sugar, and mix evenly.
- 3

Chop the cilantro and set it aside.
- 4

After waiting for 10 minutes, squeeze out the water from the shredded radish.
- 5

Add chili powder, Sichuan pepper powder, and MSG, and mix evenly.
- 6

Add the cilantro and mix well.
- 7

Mix water into flour at a ratio of 5:8 to make a batter.
- 8

First, coat the mold spoon with a layer of batter.
- 9

When the oil reaches 60% heat, put it in the pan and fry until bubbling (about 10 seconds).
- 10

Then put the mixed shredded radish into the spoon.
- 11

Drizzle a little over half a spoon of batter.
- 12

Fry in the oil for one minute to remove from the mold, then fry both sides until golden brown.
- 13

Ok, the radish cakes, crispy on the outside and tender on the inside, can now be taken out of the pan and plated.
