Cumin Beef
Beef slices hit a smoking wok with salt, a three-to-one blend of chili and Sichuan pepper powders, then cumin added in two stages, before screw peppers, scallion and garlic sprouts join for a fiery, aromatic stir-fry with pronounced cumin notes.

Beef slices, snail peppers, green onions, and garlic sprouts cut into water chestnut sections.

Mix chili powder and Sichuan pepper powder in a 3:1 ratio, and prepare cumin powder and chili-Sichuan pepper powder separately in a 1:1 ratio.

Heat a cold pan with oil until the oil boils, and cook until the pan starts to smoke.

Add the beef slices and stir-fry until the meat slices turn slightly white.

Add salt and stir-fry until the color of the meat slices has basically disappeared.

Add chili powder and Sichuan pepper powder and stir-fry evenly.

Add half of the cumin powder and stir-fry evenly.

Add the side ingredients and stir-fry a few times.

Pour in the other half of the cumin powder and stir-fry until the side vegetables are just cooked.

Take it out of the pot and serve it on a plate.
