Pork Ribs Stewed with Pickled Cabbage
Pork ribs are blanched and simmered in a sandpot with ginger, scallion, dried chili and Sichuan pepper, while pickled cabbage is stir-fried with star anise and cassia, then the two are combined into a deeply savory, sour stew.

Put the pork ribs in cold water and add scallions and ginger.

After it comes to a boil, continue to cook for two to three minutes.

After taking out the ribs, rinse off the blood foam and dirt on the surface.

After cleaning, put it into a clay pot, add cold water, scallions, ginger, dried chili, and Sichuan peppercorns, and bring to a boil.

After bringing to a boil, reduce to low heat and simmer for 40 minutes, adding salt when there are 30 minutes remaining.

Clean the pickled vegetables and cut them into shreds, then add green onions, star anise, and cinnamon.

Heat the oil in the pan until it boils.

Pour in the pickled vegetables and stir-fry evenly.

After stir-frying until fragrant, add salt and white pepper and stir-fry.

Stir-fry evenly and then set aside.

After stewing the ribs for 40 minutes, add the sautéed sauerkraut and stew for another 25 minutes.
