
Exclusive Orange-Scented Spare Ribs

Wash the oranges, remove the peel, cut into small pieces (until the white pith stops), juice them, reserving a few slices. Wash the ribs, blanch them, and pat dry.

Fry the ribs in hot oil.

Add rock sugar, light soy sauce, ginger, garlic, and green onions, and stir-fry until fragrant and changed in color.

Pour into the pressure cooker, add orange juice, vinegar, water, dark soy sauce, orange slices, and salt. Turn off the heat after 18 minutes once it reaches pressure.

Add the potatoes and crushed orange peel, then simmer for 3 more minutes before turning off the heat.
