Stir-fried sliced meat
Pork loin, velvety with starch and soy, is stir-fried then reunited with crisp purple yam slices and aromatics, finished with a touch of oyster sauce, a gentle dish where snappy, nutty-sweet yam plays against tender meat.
Instructions
- 1

Cut the tenderloin into shreds, add salt, cooking wine, light soy sauce, and a mixture of water and starch, and mix well to marinate for 10 minutes.
- 2

Peel the purple yam, wash it clean, and slice it.
- 3

Cut the green onions, ginger, and garlic into slices or sections.
- 4

Heat a cold wok with oil, add the shredded meat and stir-fry until it changes color, then remove it.
- 5

Leave some oil in the pan, add the scallions, ginger, and garlic, and stir-fry until fragrant.
- 6

Add the purple yam and stir-fry; you can add a little water and cook for a few minutes.
- 7

Add in the super good shredded meat, season with salt and oyster sauce.
- 8

Sprinkle in the chopped green onions, stir-fry evenly, and remove from the pan.
- 9

Purple yam is crisp and delicious, nutritious and tasty.
