
Stir-fried White Jade Fungus with Celery
Snowy white wood ear and emerald celery slices stir-fry into a crisp, refreshing duet, prized for its delicate crunch, clean flavor, and an elegant jade-and-snow appearance.

Take a small handful, add to boiling water and cook the white jade fungus for 10 minutes, then turn off the heat and let it simmer for another half hour. Rinse with cold water. The white jade fungus becomes whiter in color and tastes richer after soaking and cooking, as shown in the picture.

Choose good celery, wash it clean, drain the water, cut into one-inch sections, and set aside.

Slice the garlic and cut the dried red chili peppers into sections.

Heat the pot and add an appropriate amount of oil, then add garlic and chili to stir-fry until fragrant. Next, add the celery and stir-fry a few times over high heat, seasoning with an appropriate amount of salt and a little light soy sauce. Continue by adding white jade fungus, stir-fry evenly, and it's ready to serve.
