
Stir-fried Pork Slices with Young Ginger
Young ginger shoots, milder and juicier than mature root, flash-fry with thin pork slices into a zingy, warming seasonal stir-fry cherished for its bright, peppery freshness.

Slice the pork belly thinly, then mix with salt, cooking wine, light soy sauce, and cornstarch slurry, and marinate for 10 minutes.

Chop the green onions, garlic, and chili peppers and set them aside.

Peel and wash the young ginger.

Cut into thin slices.

Heat a cold pan with cold oil, add the meat slices and stir-fry until they change color, then add the white parts of the green onions, garlic, and chili.
