Steamed Four Happiness Meatballs
Plump four-joy meatballs steam atop tender winter melon slices, letting the vegetable soak up rich meaty juices while the large rounds stay remarkably light and moist, fit for banquets.

Prepare the main ingredients: 220g of front leg minced meat, 200g of winter melon, and 100g of lotus root starch.

Chop the lotus root (using a meat mallet is easier).

Add salt, sugar, white pepper powder, ginger powder, cornstarch, red yeast rice powder, and chicken essence to the minced meat and mix well.

Add the crushed lotus root and mix it, then marinate for ten minutes.

Peel the winter melon, use a fruit knife to scrape it into thin slices, lay them around the edge of the plate, and arrange several layers, as shown in the picture!

Form the minced meat into four large meatballs and place them on a plate, then steam for 30 minutes once the water boils.

In the last two minutes, add goji berries for garnish, sprinkle 1 gram of chicken essence to enhance the flavor, and the steamed Four Happiness Meatballs are done.
