Marinated Meat Platter
A fragrant master stock transforms assorted meats and vegetables into a jewel-toned braised platter, the beloved Chinese deli classic where every slice carries deep soy-spice aroma and melt-in-mouth richness.

Prepare the main ingredients: chicken legs, pork shoulder, lotus root, tofu skin, fried tofu, eggs (boiled in advance).

Put the chicken leg into the pot with cold water, add green onions and ginger, and use cooking wine to remove the fishy smell.

Boil to bring out impurities and blood foam, then scoop them out and set aside.

Add a little oil, stir-fry with rock sugar until the sugar forms yellow bubbles, then add water and cook briefly, and the caramel color is ready.

Put clean water in the pot, add all the ingredients, then add ginger, green onions, caramelized sugar water, 2 chili peppers (optional), and a pack of Nan Shi Zhao braising spice mix. Add salt according to taste. If you think the color is light, you can add soy sauce to adjust the color. Bring to a boil over high heat, then simmer over medium-low heat for about 25 minutes.
