
Pickled Cabbage Stewed with Tofu
Tangy pickled cabbage and resilient tofu stew gently together, the sour, warming broth permeating every bite of tofu, an easy one-pot wonder that comforts on chilly evenings.

Pickled sauerkraut.

Cut and set aside.

Pork belly is beaten with an egg, a little sweet potato starch and dark soy sauce are added, and mixed evenly.

Old tofu, set aside.

Break the old tofu into pieces by hand.

Soak the sweet potato vermicelli in clean water for about ten minutes, then take it out, put it into a bowl, and set it aside.

Slice the garlic, cut the dried red chili peppers and the scallions into sections, and set aside.

Heat the pot and add an appropriate amount of oil, pour in the pork belly, stir-fry, then add garlic, green onions, and chili peppers, stir-fry until fragrant, then add pickled vegetables, stir-fry on high heat for a while, add a bowl of water, and put in tofu and vermicelli.

Simmer over low to medium heat; the longer you simmer, the more flavorful it becomes. After ten minutes, turn off the heat and sprinkle with cilantro.
