Exclusive Scallion Oil Shredded Chicken
Whole chicken marinates in soy, oyster, and dark soy sauces, then pressure-cooks atop fragrant fried scallion oil until succulent. Torn into tender shreds and coated in the savory onion-scented juices, it's an aromatic cold or warm centerpiece.
Instructions
- 1
Wash the chicken and pat it dry
- 2
Wash the onions and cut them into pieces
- 3
Wash the ginger and slice it
- 4
Place the onion and ginger slices together with the chicken in the dish.
- 5
Add an appropriate amount of light soy sauce, oyster sauce, and dark soy sauce
- 6
Knead and mix evenly
- 7
Let the coated chicken sit for about an hour to marinate and absorb the flavors
- 8
Wash the scallions and cut them into sections
- 9
Heat oil in the pressure cooker and add the chopped scallions
- 10
Stir-fry the chopped green onions until fragrant
- 11
Add the chicken, along with the marinade, into the pot, and add a little water.
- 12
Bring the pressure cooker to a boil over high heat and cook for about 5-10 minutes, checking the size of the whole chicken in between, then remove and let it cool.
