Onions Stir-Fried with White Jade Wood Ear Mushrooms

White wood ear mushrooms, boiled and soaked until pearly, stir-fry with sweet onion petals in a light savory glaze. Their delicate crunch and the onions' mellow sweetness create a clean, unusual side dish.

    Set the white jade fungus aside for later use.

    After the water boils, add white jade wood ear mushrooms and cook for 10 minutes. After 10 minutes, turn off the heat and let it simmer for another half hour.

    Rinse with cold water, and the white jade fungus will have a whiter color and a richer taste after being soaked and cooked.

    Peel the onion, wash it, cut it into thin strips, and set aside.
